Broiler Welfare at USHG

By 2024, we will source only chicken certified by Global Animal Partnership (GAP), and require all chickens who are transported off-farm for processing to be rendered unconscious prior to shackling using multi-step controlled atmosphere stunning, a process that's widely hailed as more humane.


At USHG we care about our impact on our communities and planet, which is why we source from local purveyors at the Union Square Greenmarket, give back to our communities, made a commitment to end our use of plastic straws, and more. This commitment also extends to ensuring the animals whose meat we serve are treated ethically and humanely. To that end, we’re partnering with The Humane League to source the chicken served in our restaurants in the most humane way possible.
